2 lbs striper fillet in 1" cubes

6 cups of water

3/4 cup of sugar

1/2 medium onion

1 tbl butter

2 tsp kosher salt

1/8 tsp chilli powder

1/8 tsp old bay

1/8 tsp black pepper

Boil all but the striper for 10 minutes

Throw in cubes and turn down to 1/3 heat.

When cubes float they are done

I serve it with melted butter. For larger stripers, the texture is almost the same as lobster. It's best to serve it as hot as possible.
