I hook em through the back end of the tail with an Owner hook.

Sometimes I will cut em up and toss a piece out as well if nothing is happening.

for spiking live eels I think the tail is the only way to go, they will swim away from the hook. Through the head is only good if you are jigging them in, otherwise you get the ol'eelball

One question I have since I have never used ells on the surf how well do they stay on the hook while casting and ( OK two ) would you use a longer leader to let the eel move around more?

when I did use them it was with a 10-12" leader, they stay on fantastic. Caught about 10 giant skates on the same eel one night and it stayed alive the whole time. Through the tail when spiking, through the head they do fly off sometimes. I fished them pretty hard last fall (2 rods out of 4) with not a hit, no action on bunker either though. Didn't bother with them this season, but didn't fish much either.
