Ingredients: 1 1/2 cups margarine (3 sticks)
1 teaspoon minced garlic
1 teaspoon salt
1 teaspoon cayenne pepper
1/2 teaspoon white pepper
1 teaspoon black pepper
1/2 teaspoon thyme
1 teaspoon basil
3/4 cup white wine
1/2 medium red onion,sliced very thin and chopped
1 pound peeled,deviened shrimp
1 pound rockfish fillets,skinless and sliced thin

In small bowl add all dry spices ,mix together
In medium sauce pan ,melt margarine ,add garlic and dry spices.
Cook until margarine starts to bubble,add white wine and red onion.
Add rockfish and shrimp. Cook until fish is opaque and shrimp is pink.
Serve with black bean salsa.

SALSA

Ingredients:1 4.5oz can green chilies
1 11oz can white shoepeg corn (drained)
1 10oz can diced tomatoes and green chilies
1 15.5 oz can black bean Frijoles Negros(drained and rinsed)
1 bunch spring onions (chopped)
1 teaspoon minced garlic
1 teaspoon dried cilantro
juice of 1 fresh lime


Mix all ingredients together , salt & pepper to taste
