    Just got back from dinner at Harborside..... good but not as good as some smoked oysters.....

    Default Here's the deal

    Oysters--- l have a Weber Grill so I am talking about charcoal here with Apple Wood Chuncks soaked on a cedar plank... also soaked.

    So the charcoal gets nice and hot--the raw oysters are put on the plank along with the scallops.

    That's it... right before you put on the oysters and the scallops you put the soaked wood directly on the charcoals and then the oysters and the scallops (which are on the cedar planks) and cover. They smoke for 15-20 minutes and your done. Don't lift the cover and remeber we did not put a ton of coals on so the overall tempeture only was around 300...

    Same thing applied to the smoked Wild Caught CoHo Salmon... we only use wild caught not the Atlantic Stuff with Dye added...

    We coated the oysters, scallops and salmon with salt,pepper and BUTTER with Terayaki on the scallops... Mmmmmmmmmmmmmmm

    Simple, easy and impressive.

    Sounds tasty man. Even though it was over 100 degerees up here the other day, I fired up the smoker for poops and giggles, and some awesome chicken. Ahhh, beer, sweat and smoke. SUMMERTIME.
