I am a victim of overkill, just ask anyone that has seen the back of my truck! Even Sunday on the canal, I took my 8' with 30# in the yak. Duh, overkill, didn't even use it.
I would gesture to say that your first two mentioned setups will do just fine. A 6-7' pole with a good backbone and something along the lines of a Penn 750 (med-heavy) loaded with 30# braid will do anything you need it to do. Don't overload in the yak, it's a real pain in the keester.
Make darned sure you take a lighter pole (6' light-medium) with you too!!!
No overkill!!!!
Remember, everything can sink or get lost.....
Tie it down. Put the tackle in a bucket and keep the lid on it.
