Default Striped Basstrami

I tried this last night. Quick, easy and very tasty

1 1/2 pounds striped bass fillet, skinned
2 tablespoons coriander seeds
2 tablespoons mustard seeds
2 teaspoons cumin seeds
1 teaspoons coarsely ground pepper
2 cloves garlic, minced
3 tablespoons olive oil
2 lemons, juiced

Cut bass into 4 serving pieces. In a coffee grinder, coarsely grind up coriander, mustard, cumin and pepper. Coat fish with mixture and garlic. Drizzle on olive oil and set in refrigerator for at least 4 hours, turning every hour or so. Preheat oven to 400 degrees. Over high heat, sauté fish (in ovenproof pan) to sear. Pop into oven for 5 minutes to cook. Remove fish from pan and add lemon juice. Cook down on stove until syrupy. Serve over fish.

NO reason we can't have two cooks right? That way Dave & Bob can each spend some time away from the grill :glasses9:

Default Bluefish

Oliver, you should have cooked up that bluefish. Sam's father told me about a great recipe for bluefish!!!

I have a feeling things will change on of Saturday, so to get ready, here's a request for all the great striper recipes you guys have . . . .

Here's a good one Nancy:

Bounty Hunters Striper Cakes

5 lbs of striper fillet boiled in 6 quarts of water add 1/2 cup of sugar. Let fish boil until it floats the remove from the water.

Combine :
crushed crackers
3/4 cup of milk

Mix fish with filler and form into 1/2 cup patties and place in a pan with hot vegetable oil and fry till golden brown.

Thanks for the recipe, Bob - now let's hope I can catch some stripers tomorrow so I can try it out. I really want to serve up a striper to Poppa so he will add me to his list of "real" fishermen. Poppa says Oliver is a real fisherman because he puts fish on the plate!!!!!
